So the man wanted to make some Butter Cookies tonight and every recipe he came across called for Powdered Sugar. I kept telling him we didn’t have any but he just really really wanted those Butter Cookies. So I came up with a cheap and easy fix. Make your own powdered sugar at home, no need to run to the store.
All you need is
1 cup of sugar
2 tbs of cornstarch
Place it in a mixer/blender/bullet and let it spin for a while until it becomes powdery in texture.
Yup just as simple as that and it turns out great!
So I was really wanting something sweet the other night and decided to try to make some No-Bakes. They turned out super yummy.
Here is my recipe.
What you will need
1/2 cup milk
2 cups sugar
In large saucepan, mix sugar, butter, and milk
I had these super thick Pork Chops and wanted something new to do with them. So after some searching and tweaking I can up with the Un-Stuffed Pork Chops.
Ingredients you will need:
Pork Chops: Any thickness will work since we are not stuffing them.
1 Box of Stove Top Stuffing: I used Pork Flavor
1 Can of Cream of Mushroom Soup
First fill a pan with a little oil and pan sear your chops. They don’t have to be cooked all the way through, you just want them good and brown! While these are browning up go ahead and fix your Stove Top according to the directions on the box. Pre- heat your oven to 350
Once your chops are browned and your stuffing cooked, you are ready to assemble. I lined a 9×13 pan (I love easy clean up). I placed the chops in the bottom of the pan. I added about two Tablespoons of Stove Top to each chop. Once the Stove Top was in place I spooned the Cream of Mushroom soup over the chops. Covered the pan with foil and baked for about 35-40 mins, depending on the thickness of your chops, you may need to bake a little longer.
Add what ever sides you would like and dinner is served. Super fast and easy!
Resurrection Rolls and Easter
There are two times a year that I just love, love, love! Christmas cause we observe the birth of my Savior Jesus and Easter because my Savior loved us so much that he gave his life that we may live. I am humbled by that love. Being a mom with only one child I can not imagine giving the life of my only child for anyone. There is no other love that compares to the one that God has for us. I really want Mini to understand that Easter is more than Easter Bunny and Easter Eggs, so we set out to make Resurrection Rolls and tell the story God’s love!
We gathered our ingredients for our Resurrection Rolls
1-2 cans of Crescent Rolls – these represent the burial cloth that Jesus was wrapped in
1 Bag of Large Marshmallows- these represent Jesus, all white and pure because he is without sin
Melted Butter- this represents the embalming oil
Cinnamon sugar-this represents the spices that were used for burial
Preparing Jesus for Burial: Roll the Marshmallow in the oil and then in the cinnamon sugar
Next wrap Jesus in the burial cloth. Make sure you pinch all the seams or you will end up with a Marshmallow mess. (only two of ours turned out right)
The oven is used to represent the tomb that Jesus was placed in. Cook the crescent rolls according to the directions on the package. While the rolls baked we read John 20:1-18.
He has risen: After the rolls are cooked let them cool and then cut them open. Mini was shocked to see that Jesus was no longer in there. Taking the time to do this helped Mini SEE not just hear that Jesus rose. What a great way to not only tell, but show your Mini-Me’s the true meaning of Easter.

On my Dinner Table: Crispy Tilapia Strips with Garlic-Lemon Mayonnaise
So I love to cook and try new things. I love making up ideas on my own or taking a recipe and spicing it up. Trouble is I am horrible at measuring the stuff out I use. So I will do my best with the correct measurements in this recipe. If you make any of my recipes I post please come back and leave me a comment with what you and your family thought of it. Crispy Tilapia Strips with Garlic-Lemon Mayonnaise
What you will need2 lbs tilapia fillets
2 lbs tilapia fillets
1 cup all-purpose flour
3 eggs beaten
2 cups Italian flavored bread crumbs 1/2 cup of shredded cheese
pepper olive oil
2 tbs of minced garlic 1/3 cup lemon juice 1 cup mayonnaise
Rinse each Fillet and lay on paper towel to dry.
While waiting for Fillets to dry, get 3 shallow large bowls. Fill one bowl with flour, salt, pepper. Fill second bowl with 3 eggs beaten. In the third bowl add bread crumbs and cheese.
Finish drying fillets by patting with a paper towel. Cut fillets in half.
Lay out a sheet of wax paper. Dip strip first in flour shake any extra flour back into the bowl. Then dip both side of the strip into the bowl of eggs. Next roll both sides in the bread crumb bowl. Lay on wax paper and continue until all fillets are completed.
Heat olive oil in a on-stick pan over medium heat. Place tilapia strips in pan and cook about 2-3 minutes on each side.
While cooking lets make the sauce. Take the minced garlic, lemon juice, and mayo. Mix in a bowl together.
Take the same wax paper from before and add paper towels on top. When fish is completed transfer to wax paper with paper towels and let sit for a minute to drain any extra oil. Then spoon sauce over top of strips.
On My Dinner Table Tonight: Chicken Parmesan
What you will need
1 Jar Ragu Chunky Sundried Tomato & Sweet Basil
2 cups Elbow Macaroni
Cook Chicken As Directed On Bag
Cook Pasta As Directed
Layer plate as follows Noodle, Shredded Cheese, Sauce, Chicken, Sauce, Shredded Cheese, Parmesan
Serve and Eat! This is a quick and easy meal the whole family will love.

Give them your Heart with this Easy to Bake almost Sugar Free Valentine Cake!
What you will need
Sugar Free Cake Mix (flavor of your choice) I used White Cake Mix
Sugar Free Icing (flavor of your choice) I used Vanilla
Sugar Free Instant Pudding Mix (flavor of your choice) I used Banana
10 Fresh Strawberries
Red Food Coloring
Heart shaped sprinkles
Start by washing your strawberries and cutting the stem area off.
Chop strawberries to your liking. I like mine 3 long ways 3 side ways cuts. Set aside.
Mix pudding according to directions on the package. Set aside.
Mix cake mix according to directions on the package but DO NOT use water or oil. Pour all of pudding mix in instead. I REPEAT NO WATER OR OIL. The pudding will make the cake extra moist.
Mix in food coloring and strawberries. Mix well to make sure all the cake batter turns pink/red.
Pour into a round baking pan and the rest into a square baking pan. (I didn’t have a square pan so I did a rectangle and after baked cut into a square)
Bake according to directions on cake box.
Let cool for about an hour. If you used a rectangle pan cut a small portion off to form a square. Cut circle cake in half. Place into a heart shape.
Put the icing on and decorate as you please.
That special someone will love you even more after seeing how much you care. And the kids will enjoy it and not even know its almost completely sugar free!

On My Dinner Table 1/18/13 Mini Sloppy Joe Pie
What you will need
- 1 lb ground turkey
- 1 can of sloppy joe
- 1 large onion, chopped (1 cup)
- 1 cup shredded Cheddar cheese (4 oz)
- 1/2 cup milk
- 1/2 cup Original Bisquick® mix
- 2 eggs
- Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
- In 10-inch skillet, cook ground turkey and onion over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; stir in the can of sloppy joe and cheese.
- In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup burger mixture. Spoon 1 tablespoon baking mixture onto burger mixture in each muffin cup.
- Bake about 30 minutes or until toothpick inserted in center comes out clean, and muffin tops are golden brown. Cool 5 minutes. With thin knife, loosen sides of muffins from pan; remove from pan and place top side up on cooling rack. Cool 10 minutes longer, and serve!
